That all sounds pretty normal to me, except for the amount of tuna. Was that a whole can? Maybe next time, just go for 1/2 of the can, eat it slowly over a 20 minute period, and see how you feel afterwards.
What's your doc recommending for protein intake? I ask because I noticed you don't have any protein drinks listed. It might be a good idea to start mixing a scoop of protein powder in with your oatmeal. There's a unflavored, heat stable brand called Optimum Nutrition Any Whey unflavored. I've never seen it in a store, but I buy it on Amazon.com.
Or...forget the oatmeal altogether, and have an egg (or Egg Beaters) instead. It's a great source of protein and will probably satisfy you more than the oatmeal does.
