I'm now close to 9 months out I'm feeling at my best if I keep my carbs around 30% of my total intake. My NUT would prefer that be upped to around 50% but I can't handle more than I am at present.
I keep my fats around 20% and the rest is protein.
My carbs come from good sources, whole grains, nuts, fruits and vegetables.
Golden rule for me is that if it's white - I ain't eating it!
At your stage, the one and only thought I had was to get my protein in. I didn't count anything other than that.
Make friends with fitday.com I works your protein, fat and carbs out for you.

I think you're okay with the amount of carbs in cream of chicken, mushroom, etc soup. (Although I very seldom eat soups because of the low amount of protein...unless I add in Unjury unflavored protein powder.) Don't forget that milk, yogurt, etc has carbs too, but it's from the milk in it, and those types of carbs are perfectly fine.
What I think you really need to avoid at this stage, is things like pasta, rice, potatoes, corn, crackers, etc. I'm just a couple of days ahead of you (mine was May 29), and I started Phase 3 today (my doc progresses faster than most). So far the only "true" carbs I've had is 3 saltine crackers (with tuna salad). Oh, and I ate 6 tiny little Gnocchi tonight...stolen out of my son's takeout. OMG, I wish I hadn't given in to temptation, because it feels like a brick laying in my pouch...obviously I wasn't ready for pasta yet.

If you're buying canned soups - just look for the fat free/low fat stuff.
Progresso do a superb range - their Classics and Healthy range are still a favourite of mine - Healthy Classics Vegetable with some shrimp thrown in - YUM!
Check out Calorie-Count.com Calorie-Count.com Search - progresso soup
And if you want to make it yourself - you can use Recipe Calculator
In honesty, at your stage, I really wouldn't worry about the carbs in veggies (other than potatoes). Just watch the pasta and rice etc. Remember, protein first.

Soft boiled eggs worked well for me - I can almost finish 2. But when I tried scrambled weeks ago, twice, they got stuck, both times.
Egg substitutes worked better, but I didn't have the nerve to try until this morning. I made a cheese omelette. I ate half and my dog ate half, but I am glad to say, nothing got stuck and there was no nausea.
Take small bites, chew chew chew and pause between bites.
After 7 weeks, I thought I was lucky that I haven't thrown up and that I'd never throw up, but I did, right when week 8 started, twice, but I'm starting more soft solid foods. Now I REALLY am learning to listen to my pouch.
Slider foods just don't talk to pouchy loud enough. I don't think this is the last time the food will come up-- but it wasn't that bad, the throwing up part... the stuck feeling lasted 45 minutes (instead of my usual 5) and that was indeed the worst... I don't think I've ever had a feeling like that, ever, and I never want it again (me thinks it was stuck and dumping at the same time).
P.S. Though I chewed it well, pouch did not like KFC chicken, no skin, dark meat. Five bites and it was aweful, aweful, aweful!
