Beef
I'm with a few other here, I don't think I would have made it without beef. I still can only stand chicken or turkey once in a while (like once a month) and NO seafood at all!! So for me it is either Beef or the occasional pork.

I used to love fish, now it makes me very sick. Chicken, sometimes but the beef, god bless the beef cow.........I ate prime rib at 3 months out and was pleasantly suprised how wonderfully it went down, and relieved as I was looking for concentrated protein sourses.
Jerkey is another thing that is great. Low calories high protein content just watch the salt....

Well, I guess I'm a special case because even before the surgery I hated beef. I was a chicken-tuna person(I was a TacoBell addict and always ordered my Grilled Stuffed Burrito w/ chicken instead of beef even though it cost more hah!) It(my gastric bypass manual) says that I'm allowed beef after 8-12 months(the same as fruits) but I won't be having any. I've actually been having trouble with chicken and tuna lately and I use my food processor for everything but it still makes my grouchy-pouchy hurt...

I started in with beef at 4 months. Sadly, it sits really hard with me. Like a rock most of the time, no matter how tender. I always say do what your Surgeon says...that said...if you really wanted. Try the beef...just be sure it's really moist and only do the lean cuts. Small bites and be sure to chew the dickens out of it. Don't worry, there are other choices than chicken. Heck, seafood and such is the only thing that doesn't hit my pouch like a ton of bricks. You'll find your nitch...no worries!

Starla, make some taco meat with the taco seasoning and melt velvetta with stewed chopped tomatoes (I buy them in the can) and put over the taco meat and eat til your lil heart is content! Beef was the first type of meat I could get down AT ALL, even though I still have problems with all meats. I absolutely LOVE chicken and it hates me.

I was told no red meat for now but my information from my doctor says it is ok to eat ground beef, like hamburger. It made no sense to me since hamburger is red meat. I was told that steaks and the like are generally hard for people to chew enough and tend to get stuck. But I don't know. I believe I was told wait until at least 6 months out and try to avoid it as much as possible. I have tried a bite here and there of hamburger but have been afraid of having an adverse reaction to it. I had chili once with chunks of beef in it and it felt horrible going down and in my pouch. I tried a slice of low fat roast beef the other day and threw up with in minutes of eating it. So I personally decided to stay away even though it is really really tempting.
I do a lot of ground turkey and ground turkey sausage. I found for me that most of the time it tastes better and goes down great.
