I actually cooked last night. I made my YUMMY Chicken Tortilla Soup. We are having left overs tonight...mmmm...I am getting hungry!

4 Boneless/Skinless Chicken Breasts
4 Cans Rotel Tomatoes with Green Chilis
1 Large can Refried Beans
30 oz. Chicken Broth
1 Can Whole Kernal Corn (optional)

Put the chicken breasts, tomatoes and broth in the crock pot. Cook all day on low (8-10 hours) or on high for 4-6 hours. I think the longer it cooks the better it tastes. At the end of this cooking time take the chicken out...shred it on a plate and put it back into the crock pot. Add in the beans and corn...let cook another 1/2 hour or so to heat the beans and corn through. Kinda mush the beans so that they get mixed in and don't stay in a lump.

Spoon into a bowl and sprinkle shredded cheese and crunched up tortilla chips on top... YUM!!! I like mine a little thicker, so I add a large can and a regular can of refried beans. When I say large I am not talking about the huge can on the bottom shelf....just the next size up from the reg. can. Does that make sense???

It is sooooo easy to make, I just love it!!

Yes makes sense...I'll have to wait on that recipe...sounds wonderful but I have no crockpot . Been trying to get my mommy to buy me one...but it has to be red lol!

OMG!!! I have 2 crock pots...don't need another one...BUT.... I NEED A RED ONE TOO, to match everything else! They have one at Target that I like, but I am still looking around. I have to make sure I buy the right red one cuz hubby wouldn't want 4 crock pots!

Okay, just a few things (this is my kind of topic!!)

1. $3 for pizza - perfectly acceptable. I usually tip anywhere from 10-12% to delivery drivers, but my minimum is usually $3.

2. Y'know, pizza has been a freaking godsend for me. But instead of ordering pizza, I make it myself. I think I might even ask for a pizza stone for Christmas Here's the thing: THIN crust (I'm like most everyone else, can't do regular crust, and besides which, it just feels/tastes nasty when there's too much dough now), homemade tomato sauce with lots of herbs, heap on the veggies and lean beef (or lean italian turkey sausage/low fat pepperoni if the boyfriend is eating too) and part skim mozarella. Goodness, I love covering my protein/veggie/carb all in one handy-dandy, handheld slice!

3. Now that I'm out 7 months, my attitude has definitely changed about what people eat. It's AMAZING to be out in the grocery store or a choosing a meal at a restaurant, and just be blown away by the sugar, carbs, empty calories, etc. It feels like the whole world's gone topsy-carby-turvy. But in the long run, why get on anyone's case about what we eat? Sometimes I have to wonder, if one of us says, "now don't get on my case about what I chose," does that mean we feel guilty that we made a bad decision? I know that's how I feel when I say that. Just want to throw it out there.

I don't eat pizza...was ordering it for the kids. I really don't care what anyone eats and I don't feel guilty, I just didn't want people to jump me if they thought I was eating it and they thought it was bad. I have seen how some posts get out of hand when the whole story isn't on the table.

As for the Chinese....I don't know what everyone's theory is on it...I didn't want anyone to jump me if they thought I was eating the rice, chow mein, etc. I eat the Kung Pao Chicken..only...I have no idea what's in it and don't really care...it works for me....no guilt here.

Cindy you are LUCKY that chinese food works for you. It hates me! WAAAAAAAAAAAAAAAAAAAAA I may get the guts to try the peppered steak soon though. My son had it the other day and gave me about half a thumb nail size piece of the steak and it is very tender and the taste was awesome, so may see if I can handle a few bites in a day or two. If I can keep it down and not feel like it's stuck, I will become friends with the chinese people. I'll visit every day. LOL
