But unless you're wanting a straight up whole egg, Egg Beaters are a good alternative. 1/4 cup has just 30 calories, zero fat, zero cholesterol and the same amount of protein.

Egg beaters are great! You can't even tell the difference unless you've tried them within a couple days of each other!

MY DH doesn't even know I'm using Egg Beaters - he swears up and down he could tell the difference just by look alone but by the time I've added a bunch of stuff, he doesn't notice.

My latest was to use 1/4 cup Egg Beaters as the base for a crustless pizza.

Just made it into a thin omelette, slung the fixings (turkey pepperoni, onions, low fat cheese and some spices on the top and put it under the broiler until all bubbly.

What an awesome, creative idea Corrine!! It sounds delish!!! I'm definitely going to have to try that!
