Default breadless grilled cheese

OMG, I was at Costco the other day and they had samples of a cheese. It was queso blanco. They were grilling it on a non-stick griddle. It was sooooo good. I bought the 2lb package of it (froze half of it). I had it for dinner that night.

You just cut a thick slice and put it in non-stick pan and brown it on both sides. It is amazingly good. Just like a grilled cheese w/o the bread and butter. It doesn't melt like you would expect. It stays together and gets a little crispy.

Hmmm, I don't know. I can tell you the cheese is not as dry as most. There is some liquid in the package and it is a little on the salty side. It doesn't crumble either. The texture is maybe like a buffalo mozzarella??? Not sure, but I think the texture and liquid are what keeps it from melting when it is grilled.

Good to know...I love cheese, but am unable to eat actual bread/toast. Good alternative! Thanks, I'm going to check it next time I'm at Costco.

Sounds a bit like the Greek Saganaki, I have so loved in Chicago's Greek restaurants, (minus the flaming brandy they extinguish with lemon juice before we all yell, "Oopah!")

I go to Costco, will keep my eye out for this Mexican 'Queso Blanco.'

Thanks for tipping us off to this. Wish I too knew what to advise our UK friends.

We just know it as "Mexican Cheese". It's that white stuff you find in or on every Mexican dish you order. Here in Southern California you can find that stuff in every grocery store on every corner. Maybe in your area you can try those small out of the way markets that cater to ethnic foods. It's soooo good and one of the saltiest cheeses out there. I've never heard of putting it on the grill though ... it sounds super yummy! Thank you for the tip!!

Queso blanco is a creamy, soft, and mild unaged white cheese that originated in Mexico. The name is Spanish for "white cheese", but similar cheeses are used and known throughout the world by different names. Queso fresco is a similar cheese.

It is made by pressing the whey from cottage cheese. It is very similar to cheeses called pot cheese and farmer cheese. It has also been compared to Indian paneer and to a mild feta. Queso blanco is considered to be one of the easiest cheeses to make. It is a fresh and slightly salty cow's milk cheese, whereas queso fresco may be made from a combination of cow's and goat's milk. They may both be eaten straight or mixed in with various dishes. Some versions of these cheeses melt well when heated, but most only soften.[1]

Queso blanco and queso fresco make a creamy addition to recipes, and are often used as a topping for spicy Mexican dishes such as enchiladas and empanadas, or crumbled over soups or salads. Meltable versions are used to make quesadillas.[1]

In Peruvian cuisine there are several recipes that mix queso fresco and spices to make a hot cold sauce eaten over peeled boiled potatoes, for example papa a la huancaina or ocopa.

I googled the cheese, cuz i was curious. The info. if from wikipedia.
