I am SO GLAD to see I'm not the only cheese monger in the house!
I don't do the FF cheese either - there's just no taste! My favorite is sharp cheddar. I want it to bite back - sharp as a razor. I have a couple ounces of cheese every day, different kinds so I don't get bored with it. I like to get the individual wrapped bags, makes it easier to grab and run - and it's the right portion size. In fact, for my mid-morning and afternoon snacks I have one with a half an apple, very good!
I do a lot of food smoking, and I'm getting brave enough that I'm going try my hand at cold smoking cheese and see how that turns out. If it works the way I hope, I will have attained a new level of cheese nirvana!
Has anyone tried to make their own cheese?

Trader Joe's!!!
Has a really good low fat shredded Mexican Cheese that I really like. I also get the Baby Bells Light (they are the little round wax wrapped cheese) and have those for snacks.
I happen to like the Albertson's brand 2% String Cheese better than the Frigo Lite but they are ok too. I love fresh buffalo mozzarella and I get that and triple cream brie at Trader Joes...I'm not all that concerned about my fat intake because I tend to only eat lean meats and veggies.

cheese is yummy!
I love cheese in my tummy!!
Here is my theory on fat free foods...they have been alytered from their natural state therefore confusing the digestive process and possibly decreasing nutritional value.
So, I beleive to make healthy choices is also to make choices where foods are in theri most natural whole state. whether it be cheese, veggies or anything else.
Of course that leaves out all the processed and pre packaged junk at the grocers, but opens up a pluthera of foods in the fresh isles and the dairy case...IE: CHEESE!!!!

Have you tried the little servings of "laughing cow, lite"? They are yummy on a ritz and each serving only has 35 calories. They come in a wheel with 8 spreadable wedges.

Yep! I grew up on the stuff (cept it's called Dairylee Cheese Triangles back home in England! LOL).
I'm still early out so don't bother counting calories - just the protein. So! Half a slice of wholegrain bread toasted and one lite cheese triangle gives me 5g of protein.

I have a cheese called Allegro, it is made with skim milk and actually tastes like real cheese. Not sure if it is available in the States though or not.
I am a cheese lover and will probably be eating a lot of it, hehe, so I am probably better off with this than regular cheese.

have you tried the Kraft Polly O cheese , its string cheese twisted with cheddar and soo good. I could live off of it

Sometimes, I mix shredded FF crap, I mean cheese, with the low fat cheese and it's really not bad. Mostly do this when I'm making ziti or pizza, or just topping something with cheese. Our bodies do need fat and some absorbtion of vitamins (A,D,E, K) depend on it. I love lite jarlsburg swiss as well as the mozzarella string cheese. I just got a receipt for something that sounds kinda gross but tastes like cheese cake. Take 1/2 cup part skim ricotta cheese and mix with 1/4 tsp of vanilla and 1 packet(I use 2) packets of splenda. You can add other extracts to get different flavors. I like adding almond extract with the vanilla and sprinkle a tbsp of chopped almonds on it. It is so good. This can make a whole meal at 180 cal a serving.

I love cheese. I did puree some fat free with the soups so far as a cheet but since everything tends to taste the same to me anyway I focus on addition regano or basil to anything we eat now.
I have not asked about it but one of the cheeses I would love to have is mizithra it is the best and less then one tablespoon finely grated will change the flavor of anything. I wonder how much fat and calaries it has.
