Question I'm looking for a shredded beef enchilada recipe

I've been craving shredded beef enchiladas. They would be full of yummy protein, but I can't find a recipe that sounds good. Does anyone out there have a good recipe that they'll share? I wouldn't turn down a good chicken enchilada recipe either Granted, I'll end up pulling the meat out of the tortilla, but hey, a girls gotta do what a girls gotta do.

hmmm....I don't cook much for myself anymore...so I troll about for a good, mom and pop mexican joint. I always pick the innards out...rarely eat the tortillas.

That's exactly how I eat them, most of the time I don't even eat one bite of the tortilla. There is a great mexican restaurant near my work so that's what I do for lunch. But I would really love to be able to make them, so I can have them whenever.

Making things sound nice..but then it seems so much to waste...how can you make an enchilada for 1/2? If you have family..it's easier to share.

All the good recipess are a secret!

Have you tried Food Network? The searches return with stars and reports from people who tried the recipes.

i just posted a bunch of easy recipes, i am always cooking, i make lots and freeze in my portion sizes, my freezer is stalked full of chili, stroganoff, meatloaves (turkey and beef) bags of roasted chicken, homemade pasta (whole grain and whole wheat), and meatballs. Whenever i do a roast, i freeze some in ziploc bags, that way i can pull it out, make a gravy and eat whenever i need protein. I dont use protein supplements i get 60-100 grams daily with food, and this is my way of doing it, always having my freezer full of stuff i need, and it makes it easy if something comes up and i dont have supper planned ahead of time (rare occassion) i admit it i am an organized freak.

Marie: I definitely wouldn't do much cooking if it was just me, however my two kids who live at home (16 & 4) and my hubby like to eat too. And its so much cheaper to cook at home.

Carrie: I will be looking thru your recipes. I am in a rut, and can't think of hardly anything to make for dinner that has lots of good protein in it. I have not found a protein supplement that I can tolerate, so I am left with getting it all in thru food. So any good recipes that have lots of protein are definitely appreciated!!!!

Fish and seafood are excellent sources...easy to digest and full of protein in a small package. I found the best protein poweder I could tolerate...you learn to adjust to the taste....still get one in each day to get started.
