Pancakes???
I've been craving pancakes lately!!! Are there any GB-friendly boxed mixes or recipes out there (i.e. whole grain)?

Gosh, I would LOVE a pancake! Does anyone know if there is a sugar-free maple syrup for pancakes? I think that was one of my worst nightmares to think about giving up when I had this surgery. My sweetie makes the best pancakes in this state! LOL

I am two years out and can handle just about anything except grease of any kind and sugar. I found the best pancakes ever at Ihop. They are whole wheat and Nut. I go there about 2 a month for them. I have two eggs then about 1/4 - 1/2 a pancake and boy is it good.

syrup
They do make a SF syrup, I don't know if you could call it 'maple syrup'. Honestly I don't think it's bad, but I grew up with no sugar because so many people in my family had diabetes, we just didn't have anything with sugar in it around. I think the best is an oldy but a goody, called "Nifty 50", it is made for diabetics. Also try, instead of syrup, your favorite SF fruit spread.

Here's a recipe that you may be interested in. I got it from my (ex) mother in law a long time ago and have always liked it. It's a bit thinner and less dry than a normal pancake, but on the plus side, it gives you a bit of protein with your pancakes. It's great with fresh fruit topping.
Cottage Cheese Pancakes
3/4 cup cottage cheese
2 eggs
1 tbsp oil
1/4 cup flour
Mix all ingredients and fry just like a normal pancake (use non-stick pans)

Atkins pancakes
I don't know if it's wls approved or not, but Atkins makes a baking mix that you can use for pancakes as well as just pancake mixes. Lots of protein, low fat, some fiber and only 3 net carbs. They also have a SF "maple" syrup that's pretty good--again, not sure about the wls approved thing or not.

I've never personally used them, but have non-wls friends that have and said they were pretty darn good for being low carb.

I too have caught myself craving pancakes a couple times since surgery. I took my grandaughters out to breakfast and satisfied myself with a couple of bites of theirs!

I like Smuckers SF syrup the best, it tastes like the real stuff with no weird aftertaste. But pancakes hit my poor tummy like a rock and stay there for a while. Not fun.
