I made an amazing meal last night; low carb mind you; they called it "Beef and Veggie and Cheese Casserole" and I can't believe how good it tasted. It had ground beef (of course I got with super low fat--gross grease!), spinach (who knew I'd like it in something???), lotsa cheese (I like it really crispy for some reason...is that weird???), celery, tomatoes and tomato paste.
