I would suggest the protein bar for breakfast to give you the needed energy to last through the day. Then fit in a little vegatables and fruit. That's one of the biggest thing I recall from the nutrition stuf: protein first, then vegatables, then everything else.
Don't set yourself up for failure by focusing too much on a specific amount of fruits/veggies per day. What the FDA recommends doesn't apply well to gastric bypass patients. Refer back to the handouts for guidance.
