My dietitian is a vegetarian - I'm meeting with her on Monday. I'll ask her for some vegetarian ideas (they will help me alot too) and let you know what she says.
I don't like eggs much either - I have found that scrambled eggs are helped tremendously by added lots of garlic powder and mozzerella cheese. I have been eating refried beans (with salsa and cheeder cheese), peanut butter (sometimes plain, sometimes on crackers), string cheese, fortified Jell-O, hot chocolate with protein added...stuff like that.

Before and After: Living and Eating Well After Weight Loss Surgery by Susan Maria Leach has a bunch of different recipes for protein shakes - you might like it. I checked it out of the library. Maybe your local library will have it on the shelf. Good luck and I'll get back to you on Monday.
