Cheese glorious cheese. Aside from the ones mentioned, part skim ricotta with eggs and low fat cheddar makes one hell of a fritata. Grate Parmesean and make a small mound on a non stick cookie sheet bake at 350 for 9 min and you get lovely parmesean crisps.
