The 1/2 hour+ eating rule was for while your pouch was healing and you were learning to eat again. After 6 months you should be finishing your meal within about 15 minutes. Taking too long would be like snacking - you could eat all day.
Water loading is for those people who are about a year out..... and get hungry and that helps stave off overeating by having the pouch a little full of water so you eat less to feel full.
As you can see, the rules change as you progress.
