Strawberry Short Fake
Strawberries are in season!!!
I used to make this with sugar and corn starch for some thickener, then added white/yellow cake cups, but here's something I made a few days ago.
I cut up a container of strawberries and placed it into a pot. I added 1/2 packet of stevia, tasted it and added the rest of the packet (Splenda should work well, too).
I covered and cooked it until there was some juice and the strawberries were mostly soft, 3-5 minutes. Then I put it in a container and popped it in the fridge. I like it on the slightly warm side, but it's great cold.
Spoon a few tablespoons onto a small serving plate. Top it off with a spritz of fat-free whipped cream and voila': dessert!
1-cup of sliced Strawberries is 53 calories. With some whipped cream, should be no more than 100 calories total.
Honestly, you don't miss the cake part. But, if I could find a white/yellow cake recipe that would fit the low-cal, low-carb part, I'd try it.
