Yeah, I fluctuate between the two poles. I think you are doing great. I too am up all night. I work 7pm to 730am, so I eat all my meals on the run at night while I work. When I don't work, I still stay up as you can see. I am working this weekend, so I have to stay awake and prepare for that. I work in Los Angeles, so I have a long drive then have to work 12 hours, so I am tired before I even start.
Try not to stress too much about anything. Stress is a killer. As long as you are getting your fluids in, the protein will follow. One chicken breast is like 24 grams, and one cup of milk is like 10 to 13 grams. One ounce of cheese is bout 7 grams. 40 grams is all you need honey bunny. Trial and error, whatever you can get down and keep down at this point is a blessing. I wasn't good on meat this early, so I did the baked potato with melted cheese. I do chili beans alot. Scrambled eggs with cheese is good. Even broth with cheese is 7 grams of protein. Chew well, and don't drink with your meals. Walk every day and watch the pounds melt off.
Good luck, and good night.
