Default Veggie & Cheese Casserole

1 box frozen chopped up veggies (Broccoli works well), thawed
2 cups of low fat cottage cheese
3/4 cup low fat shredded cheddar cheese
1 yellow onion, diced
1 cup egg substitute
3 tablespoons parmesan cheese, grated (I used reduced fat)

Heat oven to 375. Coat 9 inch pie plate or 7x9 inch pan with cooking spray. Mix all ingredients in a large bowl. Pour into dish. Bake 35 - 45 minutes until the center is set. Allow casserole to cool for 10 minutes.

Makes 6 servings.

Found this in 'Recipes for life after weight loss surgery'. I highly recommend that book. Made this stuff pre-op. This stuff is wonderful. Good for breakfast. yum yum yum.
