BBQ Chicken Casserole
I don't eat meat, so I make this with fake chicken strips made by Morning Star. They taste great and have 23 grams of protein per serving.
Ingredients
One bag of Morning Star fake chicken strips (substitute real chicken if you like)
One green bell pepper
One red bell pepper
One yellow bell pepper
One medium onion
One can diced tomatoes
Bottle of BBQ sauce (look for a sugar free sauce to avoid dumping)
Shredded cheddar if desired
Directions
Chop the peppers and onion into small pieces. Combine all ingredients except the cheese in a casserole dish. Bake for 60 minutes at 400 degrees. If desired, top casserole with shredded cheese, then put it back in the oven for 10 minutes to melt the cheese.
