I think you're okay with the amount of carbs in cream of chicken, mushroom, etc soup. (Although I very seldom eat soups because of the low amount of protein...unless I add in Unjury unflavored protein powder.) Don't forget that milk, yogurt, etc has carbs too, but it's from the milk in it, and those types of carbs are perfectly fine.
What I think you really need to avoid at this stage, is things like pasta, rice, potatoes, corn, crackers, etc. I'm just a couple of days ahead of you (mine was May 29), and I started Phase 3 today (my doc progresses faster than most). So far the only "true" carbs I've had is 3 saltine crackers (with tuna salad). Oh, and I ate 6 tiny little Gnocchi tonight...stolen out of my son's takeout. OMG, I wish I hadn't given in to temptation, because it feels like a brick laying in my pouch...obviously I wasn't ready for pasta yet.
