My new favorite to replace rice is "quinoa". It's sort of like wild rice, but it is very high in protein. I use it to make stuffed peppers or pilaf.

If you make your own sauce you can always control what's in it. The few times I've bought ready-made sauce in the last year, well, the time spent looking for a sauce made w/o added sugar or oil could have been spent making a perfectly good sauce from "kitchen ready" or "pureed" tomatoes. My sauce is also waaaaaaaay tastier than store-bought too. Check out the recipe section here, there are some excellent recipes!
