Okay.. please don't think I'm crazy.. but you could *totally* make a dessert that you could enjoy as well using the FAGE yogurt.. (shoot, I need stock in that company!)...
I don't know about the quantities.. probably 2- 17oz containers of the plain 2% .. one whole box of sugar free jello mix in your favorite flavor.. I did cheesecake today..
Splenda to taste, small amount of skim milk to help blend everything, and I added a touch of DaVinci Sugar free White Chocolate syrup..
I mix it all in a bowl till well blended - note.. the jello mix sets up quick, since it's instant jello.. so I make sure that I have everything else in the bowl first before I dump it in, and mix well with a rubber spatula.
This gets VERY thick, and could easily be poured into a graham cracker pie crust, then chilled.. topped with SF cool whip when serving.. he would NEVER know it was healthy for him. If you made a pudding flavor that is chocolate friendly, you could add chocolate shavings on the top for a bit of a fancy look.
I made this basic idea for a dessert for my fiancé , Geof this weekend, using banana creme and he really liked it (minus the crust, as he's also diabetic)..
It would *totally* work and not too expensive.. not time consuming or difficult either. If I were you I would experiment a day or so ahead of time to get the right consistency.. and the good thing is.. it is so WLS friendly that you can be your own guinea pig!
