Hmmm, I don't know. I can tell you the cheese is not as dry as most. There is some liquid in the package and it is a little on the salty side. It doesn't crumble either. The texture is maybe like a buffalo mozzarella??? Not sure, but I think the texture and liquid are what keeps it from melting when it is grilled.
