True, you won't know what you can and can't tolerate until after. IMO after the first year it does get a lot easier and you will eventually tolerate more and more. As for cheese it's a wonderful source of protien (havarti.. mmmm my favorite) but watch the calories. I remember my surgeon telling me that one week you will be fine eatting something and then the next week you can't tolerate it at all. It's strange, but you'll work through it and you will do just fine! Chin up! Sounds like you're well on your way to being healthier and happier too!
