I've been mostly eating microwaveable foods lately, and I just read the weight on the box. I decide how many meals I'm going to eat it for, cut the meal into pieces after it's cooked and throw the rest in the 'fridge. It's nothing scientific, but it's pretty simple, and it's getting easier to size up the portions just by looking at them.
Just a note: Gardenburger's Vegan "Riblets" are absolutely delicious! (My favorite microwaveable food).They come in a box of two each weighing 5 oz, 240 cal, 17g protein. I cut them in half and eat with either 1 oz string cheese or 1 oz Bush's Vegetarian Baked Beans. With the cheese my meals come out to 190 cal, 16.5g protein; with the beans it's 152.5 cal, 10g protein.
