One of the other reasons why mashed taters aren't the best idea for me is the fact that they have a relatively high glycemic index. For me, that means dumping. Even though potatoes are a complex carb, they are converted into sugar by the body quickly and cause a rise in blood insulin levels. That spike in insulin is the root of insulin resistance.

As a diabetic with normal sugars after surgery, I don't wanna mess with perfection. And even for people without diabetes, high glycemic foods aren't recommended for weight loss as insulin is your body's "fat storage" hormone. there are several good sites online that explain the whole glycemic index thing....worth a read for sure.
