Hi, I'm still pre-op, but I've been on a few cruises.

The buffet will have TONS of choices available. I've only been on Royal Caribbean cruise, not Carnival, but there should be an omelette station at the buffet in the morning. They will cook you an omelette to order, or fresh scrambled eggs (I hate the ones on the bar), fried eggs, or Egg Beaters.

If you plan on eating in the dining room, I'd make it a point to see the maitre de (spelling?) on the first day. Explain that you have special dietary needs, and that you may have some unusual requests during the cruise. He/she will probably ask you a few questions, and will make a note of the situation. Even though the dining room waiters/waitresses tend to be excellent, this really will make a big difference in your level of service should you require anything different than the standard menu items. On my last cruise, one of my tablemates had some type of stomach problem and this is what she had done. On many occasions the waiter would bring her food that wasn't even on the menu that night. And the maitre de came around almost every night to make sure everything was okay for her.

All of the ships I've been on have great fitness centers, and there are lots of exercise classes as well...just check your daily schedule.
