Corrine, I'm so glad you tried it and liked it! Yes, I'm sure really any type of cheese would work with this recipe, whatever your heart desires. I was thinking doing a pepper jack and then use salsa instead of the spaghetti sauce and mexican seasonings verses Italian. Different recipe but same idea.
