This has been my big question to my support group.

Absorption of nutrients and vitamins and minerals really doesn't occur in your pouch. It happens in your intestine. I don't think that drinking with them will "wash them through".

The reason for not drinking after eating is so that your pouch stays full. I'm only 4.5 months out so I still don't get hungry but it's one of those skills that you need to have in place as a habit so that when you do get further out, again 6-8 months seems to be the magic number, you are already doing the behaviors and they are a habit so it's not a shock to you and it's already easy.
