I'm not sure of the nutritional stats for this one but it sure sounds good to me.
1 2 1/2-3 pound Spaghetti Squash
1 pound lean turkey ground
1/2 cup chopped onions
1 clove garlic minced
1/2 tsp corn starch
1 8oz can tomato sauce
2/3 cup tomato juice
1 can 7oz kernel mexican corn drained
2 tsp chili powder
1/2 tsp dried oregano
1/2 cup Shredded Monterey Jack
Halve the squash lengthwise and remove seeds.
Place, cut side down on a baking sheet. Bake in 350 oven for 45min. Use a fork to shredd and separate squash into strands.
Meanwhile for sauce in a large skillet cook turkey, onion, and garlic till meat is no longer pink and onion is tender. Drain off fat.
Stir in cornstarch. Stir in tomato sauce and juice, corn, chili powder, and oregano. Cook and stir until slightly thick. Cook and stir 2 additional mins.
To serve, spoon meat sauce over squash and top with cheese.
Makes 4 regular servings.
