The best is ricotta with a bit of spaghetti sauce, melted low fat mozarella and sprinkle of parmesean heated in the micro until warm. Oh, yummy. I added sauted onion and ground chicken to it when I started meats. I lived on the stuff.
Poached fish was a real staple in the more solid phase. You will find your way and it sounds like you are doing it perfectly.
