Does anyone have any further recommentations, other than totally going back to the original pouch rules or should I just eat a modified atkins diet that has portion control and is also low fat?
This is what works for me, (being almost 3 years post op) protein first, veggies, then fruit: usually no room for carbs. So, Atkins, yes sort of. Everyone is different, find what works best for you. What is wrong with a modified atkins if it works (for you) and is healthy?

I also eat about every two to three hours. These are healthy/planned snacks really. Cucumbers with anything, celery with peanut butter, almonds with raisins, but small amounts. Meal time, protein, veggies, fruit (most of the time).

Anyone that was camping this weekend, rules did not apply!!!! LOL! And before I get slammed, we were surfing and earned our rewards!
